I have owned my Instant Pot for over 4 years now. It quickly became one of trusty tried and true appliances worth the valuable real estate in my kitchen cupboards! I regularly turn to it now to create all sorts of super fast and healthy dinners for my family. When I originally perfected my Chicken Adobo recipe, I started realizing this same basic method could be used for LOADS of different flavor profiles!
Ever since, I have been experimenting away! We’ve been enjoying this tasty keto Italian chicken for over a year now. It’s one of those recipes I almost ALWAYS have the ingredients on hand for, and with minimal effort and time, dinner is served! It has saved me on busy school sport nights where everyone is running here or there at all different times and all different places (moms….here’s a high five!).
So here’s to a quick dinner to feed the family…..still healthy…and no processed foods required!
Dairy Free Instant Pot Italian Chicken?

Instant Pot Low Carb Italian Chicken Recipe:

Instant Pot Italian Chicken
Ingredients
- 1.5 pounds chicken tenderloins OR chicken breasts cut into bite sized pieces, OR chicken thighs
Broth Mix
- 1 cup bone broth
- 1 tablespoon Italian seasonings OR 1 teaspoon EACH thyme, basil, oregano
- 1 teaspoon garlic powder
- 1 teaspoon sea salt to taste, your broth will impact final salt needs
- 1/3 cup sun dried tomatoes OR roasted red peppers
Mix in After Natural Release
- 1/2 cup cream cheese OR cashew cream (see note below) for dairy free/Whole30
- 1 tablespoon tapioca starch or any starch OPTIONAL, only if you want to thicken more. 1/2t xanthan gum for keto.
Instructions
- Stir together the 'broth mix' and add it to your Instant Pot along with the tenderloins.
- Lock on your lid, set 'manual' timer for 8 minutes.
- When the timer beeps, hit 'cancel.' Let the Instant Pot NR (natural release) for at least 10 minutes.
- Depressurize if necessary, and using a whisk, stir in the preferred cream cheese or cashew cream. Only add the starch if you want it even thicker and creamier! If you do, run the 'saute' feature for a minute or two to cook and thicken the starch.

You did it again !!! Made this dish for dinner. All I had was frozen chicken so I set the cooking time to 45 minutes, added some garbanzo bean GF pasta to go along with the chicken. My whole family absolutely loved it and my hubby went in for seconds ♥️

Miss Tessa, how long and at what temperature and pressure poundage would this need to be to work in a stove top pressure cooker?

I had a stove top pressure cooker, and I would guess that I could not use as little liquid. But Cook time should be similar (8 minutes full pressure) with a natural release , may seed to simmer off more liquid. Since I haven’t tested, can;t be sure Beth Ann!

This is the second dish I’ve made that’s supposed to have a sauce….I open up the instant pot and it’s all dried up…nothing. even starting to burn. what am I doing wrong??

I can’t hazard a guess as to why it’s not working for you Lori….BUT if it’s a pattern in your unit, definitely add an extra 1/2 cup liquid. The only reason recipes like this get away with the less that 1 cup standard liquid minimum in Instant Pots is because the chicken releases quite a bit of water on it’s own. So if a recipe is going for a sauce and uses a small amount of liquid like this recipe, I would plan on increasing your liquid minimum to the 1 cup. I wish I had a better answer for you, i’ve Made this loads of times, and had multiple people recipe test it too. Sorry for the frustration!
